Instant ramen with extras

I made spicy instant ramen with a heaping tablespoon of peanut butter and a bunch of cilantro (which was mixed into the steaming hot broth).

Ramen-ish

Edible-inspired concoction

I was craving noodles and spice — and for some reason was obsessed with using spicy tomato soup with it. I heated up a can of spicy tomato soup and added some gochugaru powder (and garlic powder), a pack of instant ramen noodles, two heaping tablespoons of peanut butter, two shredded leaves of Swiss chard and half an orange bell pepper. It was actually pretty good after I added some tamari.

Lunch

Sometimes you just want a big bowl of crispy veggies. Romaine, grape tomatoes, cucumber, orange bell, roasted pumpkin seeds, a bit of scallion and parsley, some balsamic dressing. I ended up adding a few croutons.

Vegetable craving

I ate a lot of noodles and bread this week and was craving veggies. I boiled some potatoes and mashed them with vegan marg and sour cream. I boiled some carrots in onion broth and smashed them a bit. I was going to roast some beets, but decided to boil them, then chopped up some cabbage I needed to use up and threw it in the pot. I then pan-fried a soy burger patty with a bit of mushroom soy sauce and crumbled it. It looks very blah, but really hit the spot.

Office ramen

Spicy ramen with added kimchi, sliced veggie dog and (trust me on this!) some dill pickle. I then added a broken up slice of Violife cheese to it and mixed it in so it melted. I had brought a green onion to slice in, but forgot to add it.

Canned baked beans with sliced Lightlife hot-dogs bought on sale, tater tots and sauerkraut. I had it with a side of ketchup for dipping.

Soup

I used a can of Habitant vegetable soup and added a can of kidney beans, some frozen barley, fusilli, frozen vegetables, pan-fried onions, crumbled TVP chunks, chipotle powder, smoked paprika, basil, parsley, dill, ground pepper, salt. I added extra water but the pasta, barley, TVP, etc. ended up absorbing much of the liquid.

Lunch

Often, I am lazy. Fusilli and peas in a sauce made of “spicy” tomato soup. Some leftover azifa (spicy Ethiopian lentil salad).

Ethiopian office lunch

Azifa (a zesty Ethiopian green lentil salad), gomen wot (with collards), misir wot (red lentil stew) and rice. I was going to make buckwheat “ployes” to replace injera, but ran out energy and just added some rice. Office plating.

Office Lunch

I was craving sweet potatoes and beanies and weenies last night. I oven-roasted some sweet potato chunks with gochugaru (Korean chili powder). I then chopped up a couple of Lightlife dogs from a pack I had stashed in the freezer and fried them up in a bit of plant-based butter and then added a can of beans and let them simmer a while. I mashed the beans a little when they were soft. When the sweet potatoes were done, I realized I had a forgotten bag of pierogis in the freezer, so threw a couple of them into the oven to cook in the gochugaru-seasoned oil left in the pan.

I saved the leftovers and threw in a couple of cherry tomatoes and some sauerkraut to bring for lunch today. It is so good!

Soup

I had a can of “meh” vegetable soup and decided to use it as a base. I added some precooked frozen barley, a can of mixed beans, some frozen mixed vegetables, some frozen cooked cabbage, pasta shells, chili powder, chipotle powder, smoked paprika, dried parsley and dill. I also added a bit of jalapeño Tabasco sauce and a bit of lemon juice. I had some leftover Lightlife smoked deli slices to use up and am out of bread, so chopped it into the soup.

It looks awful but is actually really good and made a big enough pot to provide me with at least 4-5 good-sized hearty bowls.

Leftovers Lunch at Work

I had cooked some bucatini (long macaroni) with diced tomatoes, crushed tomatoes, TVP chunks and seasonings. It broke into pieces as I stirred the pot or scooped it up to put into a container when done. It’s mostly covered with corn in the photo and piled alongside smashed potatoes. Then there’s garlicky sautéed collards and kale with bell pepper and cherry tomatoes.

Breakfast for Dinner

Breakfast for dinner. Tater tots, beans w/molasses and tofu scramble (with potatoes, onions, carrots, orange bell pepper, collards, corn, garlic, tomato, nooch, turmeric, black salt, tamari, pepper, cayenne, etc.).

Lunch

Yesterday I made some curry using (too many) black-eyed peas, sweet potato, onions, tomatoes and some boxed seasoning for rajmah masala. I also made basmati rice. I had a cucumber to use up, as well as the rest of a jar of kimchi, so I diced and mixed and left it overnight. I had some for lunch today and It was really, really good!

Ergonomic assessment requests via eVisitNB?

Has anyone been able to get a note for a workplace ergonomic assessment via eVisitNB? I’m not sure it’s something they do. I’m without an MD and my employee won’t allow them without a medical note. My desk area is set up awfully and it’s affected my physical well-being, so was hoping to try them out. Thanks.

Your Instant Ramen Hacks?

I didn’t take a photo, but found myself quickly throwing together a pot of soup using a pack of vegan-friendly instant ramen tonight. I do this a few times a month. I added some shredded spinach I needed to use up, frozen corn, frozen broccoli, kimchi, some Korean hot red pepper paste, a couple of chopped veggie dogs, a few drops of liquid smoke and then, on impulse at the end, a heaping tablespoon of peanut butter. It was so good!

I’ll throw in any of the following depending on which taste profile I’m going for: corn, shredded spinach (or other greens), thinly-sliced peppers, diced smoked tofu (or regular tofu, whether plain of prepared/leftover), sliced veggie dogs, kimchi, shredded plant-based cheese, scallions, sprouts, leftover roasted sweet potatoes or other veggies, sesame oil, a big spoonful of peanut butter, sriracha, hoisin sauce, chili crisp, etc.

It’s ridiculous how easy it is to go through my fridge and cupboards and to find tasty things to throw together to turn a cheap pack of ramen into something tasty and hearty.
