These buffalo tofu “wraps” absolutely slapped

It was a bit too small to actually wrap but calling it a taco feels disrespectful 😅 Anyway, suuuper crispy extra firm tofu tossed in buffalo sauce—on top of spring mix, sprouts, carrots, green onion and hummus—wrapped in a roti.

Artery-Clogging pasta bake with Seitan

Middle-of-the-week meal in which I take whatever has been getting old in my refrigerator and give it one last chance. This one has ground seitan, an ancient tomato sauce that has been living in my refrigerator for weeks, various vegan cheeses: mostly the sad, dry crumbles abandoned at the bottom of their bags, (make sure nothing is growing on them) and whatever pasta from previous cooking projects. Throw everything into a baking dish, drizzle with oil, put it in the oven, and wait until it smells good.

Meals lately

  1. “Argentinian” empanadas, yellow rice, and a vinegar based salsa but I added my vegan hard-boiled eggs into it instead of the empanadas filling

  2. A cold noodle salad with a Thai flavor profile, and added crumbled tofu with a Szechuan flavor profile. Mostly a Will Yeung recipe

3 & 4. Kala Chana makhani, cumin rice, scallion roti, palak paneer (homemade paneer), lime pickle, and brinjal eggplant pickle.

  1. Rigua de elote w/ maple syrup(?) and FYH feta

  2. Some soboro ppang I made from extra bread roll dough.

  3. Puppy tax.

Success!

First time having yogurt in months after going plant-based. I used plain soy milk (just soy beans and water) and some cultures for the first test batch. I was a little concerned since it was taking a really long time but after 14 hrs it finally set although the consistency was a bit less thick. This is the second batch made using the starter. It set so fast this time I was shocked, only took 4-5 hours!! I guess it must have been pretty hot today. I like that the soy flavor is not that strong (I’m not a fan of drinking plain soy milk 😅) but it’s not that sour so I will experiment with adding more starter next time ^ - ^

Does anyone else have any experience with making soy yogurt and getting it to have a nice tang?

Weat Protein Schnitzel with Chanterelle sauce, salty Potatoes and Lamb's lettuce

The sauce is made after a recipe by @vegan.auf.bayrisch, plus garlic powder and noosh. I also used more oat cream than him.

The Schnitzel is the "Rewe Beste Wahl Schnitzel vegan 200g"

(one piece is 100g) It was not too dry or fatty. I like it.

I put Lemon on the Schnitzel and also a bit on the Salat plus Olive oil.

First vegan mac n cheese

I tried the notco cheddar as my first vegan mac n cheese. I was lazy so did it in the microwave. Used some soymilk, home made mayo, and a slice of daiya cheddar in addition to the cheese powder. Added lightlife hotdogs (also trying for the first time today) and some pickled jalapenos.

Honestly mac n cheese was never my favorite even as a kid, but I was really curious about how the vegan brands compare.

The cheese powder surprised me by being white in the packet but somehow turning yellow when I mixed it with the noodles. It was somewhat cheesy but not that much. It was weirdly sweet though. I don’t know why but pineapple extract is in the ingredients and I’m wondering if that contributed to the sweetness?? Overall, it was alright but I’d want to try a different brand next. Oh, and I really don’t like the lightlife dogs T^T I’ve never had a beef or pork hot dog before but I want to find a vegan sausage that can compare with the vegetarian Morningstar breakfast sausage links, those were the best 🥹 Aside from lightlife I’ve only tried Trader Joe’s Italian Sausage and it was only marginally better than the light life ones.
