Banana Pecan loaf

Dry ingredients:

2 cups plain (all purpose) flour

3tsp baking powder

½ cup light brown sugar

1 cup raw sugar

¼ tsp salt

1 tsp ground cinnamon

1 cup pecans - chopped

Wet ingredients:

½ cup plant milk (I used half oat/half soy)

100g dairy free block butter (or coconut oil) - melted

¼ cup apple sauce

3 large, very ripe bananas - mashed

Preheat oven to 180°C/350°F

Lightly oil a 9x5 loaf pan.

Sift flour

Add in dry ingredients, mix well.

Mix mashed bananas, apple sauce, milk and melted butter.

Gently fold into flour mix.

Fill loaf pan.

Top with extra pecans for garnish, if desired.

Bake in centre of oven, for roughly 1 hour or until a skewer inserted into the centre, comes out clean.

Leave it to rest in the pan for 10-15 minutes before inverting onto a wire rack to cool.

If you wish to make this oil free, swap the butter for extra apple sauce, and line the baking pan with parchment instead of oiling.

Alternatively, this mixture can be divided into a 12 cup large muffin pan, filling each cup two-thirds full, and cook for 15-20 minutes, or until a toothpick inserted into the centre comes out clean.

Storing and freezing: If you wish to freeze it, wrap it in baking paper then cling film.

It can be stored for up to 2 months.

Allow it defrost overnight in the fridge when you're ready.

It can be kept at room temp, covered, for 3-4 days, or covered in the fridge for up to 1 week.

The first home-cooked meal after a vacation is so comforting

Feels so fucking good to finally cook in your own kitchen with your own appliances and ingredients again. Especially after staying in a super expensive, but absolutely stunning, location like Iceland. Got some cute souvenirs (3 linen dish towels, one small bowl and plate) for the kitchen too. Can’t wait to use them!

Pasta with roasted veggies (aubergine, zucchini and bell peppers), tomato sauce and herbs.

Great way to use up leftovers

Marinated and glazed tofu (don't ask me to recreate the sauce, just finished off old jars), roasted broccoli, and leftover frozen sticky rice mixed with riced cauliflower. Topped with crispy onions.

Bean soup on mashed potatoes

My partner makes reallly good bean soup. We usually end up eating it for days. On rice or mashed potatoes for leftovers.

Soy protein steaks with grilled onions

In Brazil a very popular dish is rice, beans and steak. I’ve made red beans, rice, soy protein steak (that I bought dry and seasoned very well), roasted veggies, bean sprouts tomato salad and farofa.

I’m the only one who doesn’t eat meat in my family, but everyone eats my food and enjoy very much.

Impossible steak and potato wedge burritos

A very simple but good dinner.

Rice noodles, Oumph Ch*cken Style in a sauce made of Gochujang, shiitake sauce, sriracha, tamarind, garlic bits and some oil.

I promise, I'll eat more fruit and veggies later xD

Edit: And a pinch of pepper mix.

Tofu spinach dip, and tortilla chips.

Silken tofu blended with nutritional yeast, salt, pepper, lemon juice, olive oil, miso paste, garlic and onion powder, chilli flakes, some hot mustard. I then crumbled some extra firm tofu in and some thawed frozen spinach. I did make a master batch without spinach to make stuffed pasta shells, and then added spinach and extra chilli flakes to the other half for the dip. Also some msg for extra flavor and some vegan mayo for texture.

Thai jackfruit curry with brown rice. One of the tastiest things I've had in a long time, but I ate it all before I could get a good photo

On a whim I followed [Hot Thai Kitchen's jackfruit curry recipe](https://hot-thai-kitchen.com/northern-jackfruit-curry/#recipe) because I happened to have the ingredients or half decent substitutes. Instead of pork I used a bag of Daring plant chicken, 2 cups low sodium vegetable broth (instead of water), and some mushroom bullion powder. I went with her suggested substitute for some of the greens and had Chinese broccoli and chrysanthemum greens.

Everything was absolutely delicious. Go to an Asian grocery store and make this, I promise you won't be disappointed. It was so easy to cook too.

(The drink I had with it was snow chrysanthemum and sweet ya bao white tea with a bit of sugar. It didn't actually turn out great but I had to make chrysanthemum tea with the chrysanthemum greens)

Pepperidge Farm puff pastry, docked and blind baked. Thinly sliced apples sprinkled with brown sugar, flour, cinnamon, cloves, nutmeg, lemon juice, vanilla and dotted with vegan butter, baked until bubbly 🤤
