First time having yogurt in months after going plant-based. I used plain soy milk (just soy beans and water) and some cultures for the first test batch. I was a little concerned since it was taking a really long time but after 14 hrs it finally set although the consistency was a bit less thick. This is the second batch made using the starter. It set so fast this time I was shocked, only took 4-5 hours!! I guess it must have been pretty hot today. I like that the soy flavor is not that strong (I’m not a fan of drinking plain soy milk 😅) but it’s not that sour so I will experiment with adding more starter next time ^ - ^

Does anyone else have any experience with making soy yogurt and getting it to have a nice tang?

First vegan mac n cheese

I tried the notco cheddar as my first vegan mac n cheese. I was lazy so did it in the microwave. Used some soymilk, home made mayo, and a slice of daiya cheddar in addition to the cheese powder. Added lightlife hotdogs (also trying for the first time today) and some pickled jalapenos.

Honestly mac n cheese was never my favorite even as a kid, but I was really curious about how the vegan brands compare.

The cheese powder surprised me by being white in the packet but somehow turning yellow when I mixed it with the noodles. It was somewhat cheesy but not that much. It was weirdly sweet though. I don’t know why but pineapple extract is in the ingredients and I’m wondering if that contributed to the sweetness?? Overall, it was alright but I’d want to try a different brand next. Oh, and I really don’t like the lightlife dogs T^T I’ve never had a beef or pork hot dog before but I want to find a vegan sausage that can compare with the vegetarian Morningstar breakfast sausage links, those were the best 🥹 Aside from lightlife I’ve only tried Trader Joe’s Italian Sausage and it was only marginally better than the light life ones.

Suggestions for Cucumbers?

Out of all the foods I have tried I feel like cucumbers are one of the worst. I like pickles (both dill and bread and butter) but aside from that I hate cucumbers so much. Unlike many vegetables, I can’t think of a single way that I like eating them. The closest I have come to tolerating them was once when I was doing a homestay and we had handroll sushi with cucumber included and I didn’t notice it that much. Another time was when a friend made a dish with soy sauce, sesame oil, and other seasonings. Additional context: I generally do not like raw vegetables at all with pickled veg being the exception even though I have grown to tolerate some more over the years so cucumbers are not special in that regard. I just hate the crunch, the wateriness, and the general “cucumber-ness” of them. But I really want to get to the point of, even if not liking them, at least tolerating them so I don’t need to ask for people to remove them. And boy are they in soooo many things 😫

Questions for Older Desi Vegans

How was it like being vegan, back in the day? Particularly interested in anyone who was vegan in the 80s or before if any are around here on reddit.

For context, I’m Indian American and have an interest in history. Fun fact: the founder of the American Vegan Society was Indian American himself :D

Anyway, what did you eat on a daily basis or on special occasions for that matter? Aside from the naturally vegan desi dishes were there any special products you bought? I feel like imitation products are not as used by Indians compared to like Chinese, or white people, but the people I know in real life do use tofu instead of paneer sometimes and they make vegan yogurt after having bought probiotic capsules online for a starter. I imagine both tofu and vegan yogurt cultures would have been in short supply back then. For that matter, was non-dairy milk even common enough to buy? Were you well represented among vegans compared to the share of the overall population? Did people assume it was a religious thing?

How much back-up food to bring for a three weeks student conference in US and China?

Hi all, I'm taking part in a student conference that involves traveling for three weeks in different areas in the US and China from what I understand the majority of the meals (like probably 90% or something) will be catered or take place at some pre-arranged restaurants.

I contacted the organization in charge of the conference who said they should be able to accommodate me but certain planned restaurants there might not be any options in which case they promised to work with me to figure something out. However, since transitioning to plant-based I've already run into cases of people with the best intentions saying they could accommodate me but then making a mistake and there not being any vegan option so I plan on bringing some food as a back up. I also don't anticipate much free time during the three weeks to buy food once I'm there.

I'm thinking of bringing some protein bars, peanut butter packs, and maybe some crackers/tortillas. Does anyone have any suggestions of how many meals worth of food would be good to bring? I really don't want to over or under-pack because either would make it difficult for me since I have BED.

Quesadilla

The filling is daiya mozzarella shreds, salsa, jalapeños, a jalapeno sauce I had, a weird tofu cheese sauce I attempted in hopes of getting rid of some frozen silken tofu I had since who knows when which did not come out great, black beans, sauteed bell peppers & onions, and some avocado. I also forgot to put oil and took too long putting it together so the tortilla got dry and very crunchy lol. Somehow it turned out really good. I wish I had a better photo.

I need advice on whether this color would suit me and also just general advice on dying hair/stuff to keep in mind for someone who doesn’t know anything about this. I was struggling to find inspo pics that are real (not AI 😭) and with a similar skin tone as me since I really don’t want to get a color that clashes with my skin tone or makes me look washed out. Even this inspo pic I think someone edited it and is not real so I need advice on if this color would suit me and if so what is it called/what do I need to say at a salon to get it? I am thinking of getting highlights/balayage. Feel free to suggest other colors/styles that you think might suit me better.
