First time using the Country Crock plant based whipping cream and wow is it easy and delicious!!

Made my husband a pumpkin coffee cake for his birthday and today got to pair it with some coffee with homemade vegan pumpkin foam over top! Such an amazing pairing and way to start the day!

Haven’t made a cake or cupcakes in like over a month I think and I was going through withdrawal. Made chocolate cupcakes with peanut butter ermine frosting!

Orzo is prepped for dinner later! Probably one of my favorite meals! I use the Love and Lemons recipe for Orzo salad as a guide and make Rainbow Plant Life’s vegan feta with tofu for it. The mint and the basil are right from my garden and I’m obsessed with adding way more herbs than you think you’d need!

I love and make the “it don’t taste like chicken” banana walnut muffin recipe very often. I used that recipe here but swapped 1 cup of whole wheat flour instead of AP flour and added pecans instead of walnuts and a pinch of flaky salt on top!

Also currently have a bowl of dough rising for Domestic Gothess’s chocolate babka which will be tomorrow or Sundays dessert and my second crack at that amazing recipe! 😛

Dandies fluff is soooo good! And my pup gets to lick the empty peanut butter container 🥰🥰😍😍

Ziti with homemade red sauce, cashew cheese sauce (a Nora recipe I think?), some Lightlife crumbles, fresh spinach and topped with some homegrown basil!

Starving and can’t wait to dig in once it’s done!!

I am still new to making bread loafs. I made bread last week using this same recipe (https://www.recipetineats.com/easy-yeast-bread-recipe-no-knead/#jump-watch) but oh my goodness this one is so so sooo much better and tastier in every way!

Same recipe but instead of making my own bread flour (a/p flour and vital wheat gluten) I used king Arthur’s organic bread flour. I also put some olive oil and flaky salt on top otherwise made it the same. I don’t have a Dutch oven so cooked via the baking tray and boiling water method.

Those changes especially the bread flour I think made it seriously perfection! My mind is blown how easy it is to make such fantastic tasting bread!

Noracooks.com recipe…it was okay but my first time working with Sichuan peppercorns and they were interesting. Didn’t realize they were floraly in taste. I’m not sure if anyone has tips but I really was a little off put by the intense soapy flavor they made the dish. Maybe just less next time? Love working with the whole dried chili peppers though!

Leftover soy curls that I had seasoned for making fajitas the other night mixed with a tomato, some cilantro and topped over a toasted bagel 😆 not a bad breakfast and used up some stuff in the fridge!

Newish to the world of regular bread making and this was so easy and yummy! Would tweak some stuff next time I make it like adding some flaky salt on top for sure but otherwise so easy to make and way cheaper than buying a loaf at the store. The seafood pasta I cook up heart of palm with a ton of garlic and capers then make a lemon buttery sauce sauce with vegan butter, fresh lemons, some crushed red pepper, salt and black pepper.
