The Persian version of chicken salad, based on the recipe from the food blog Persian Mama, adapted using vegan ingredients: seitan chicken, vegan eggs, and vegan mayonnaise. Recipes for all of these can be found on almost every vegan food blog. They're all very similar, with only an ingredient or two differing from one to another. If you don't want to spend hours in a hot kitchen making seitan from scratch, you can use Soy Curls or tofu.Β From start to table it is a somewhat time consuming project, but cooking is my hobby π

I used the recipe from the blog Mouthwatering Vegan, using sweet potatoes instead of instant potatoes. I've had the flexible silicone mold for years, so I can't recall where I bought it, but it's available from many retailers.

Based on the non-vegan recipes from Hot Thai Kitchen and W2 Kitchen on YouTube, I used seitan beef, made from scratch by combining techniques from the recipes by Connie RAWsome, The Gentle Chef, and Avocados and Ales, all free and all available online. If making seitan is too much of a bother, one of the many plant-based products can also be used, such as Impossible, Chunk, Beyond, or Juicy Marbles.

I added some vegan blue cheese (Full of Plants blog recipe) into the mix of these seitan burgers and they are so amazingly delicious, I can see myself making them on a regular basis π Next up: Blue Balls π€ππ
