Cantilevered Rim Joist questions

Hi all. Trying to insulate below my sunroom and have some cantilevered rim joists. Had everything set to do this method in the picture but I have nails from the flooring above impacting the rigid foam on the ceiling of the rim joists. Researching I’ve found these options:

1.) just hulk smash the foam up and the nails will be in the rigid foam (this doesn’t seem the best??)
2.) use a grinder/dremel to take the nails down to almost flush with ceiling then rigid foam.
3.) insulate the floor of the rim joists instead then pack with rockwool, then vertical piece.

You guys are smart, is there a better way?

Renovating room below sunroom help.

Alright you smarty pants people. This disgusting room is below our sunroom. It smells, it’s musty, and causes the room above to be either freezing or humid as hell. I’m kind of treating it as a tall crawl space. .

Here is my thought:
1.) fix drainage (gutters are crap)
2.) clear room.
3.) remove disgusting ceiling insulation
4.) rigid foam insulation the foundation walls. (Gotta figure out thermal barrier because I don’t want drywall down here)
5.) level-ish floor with sand add 12mil vapor barrier, 6” up rigid foam.
6.) insulate framed walls and rim joists (tbd what kind right now)
7.) fix or replace windows + insulate door into room as well.
8.) add dehumidifier with gravity drain.
Where am I wrong here people??

Advice Needed

Alright you super smart people. I have a sunroom that was turned into a fully insulated room before I moved in. Below it is a dirt floor room, insulation in ceiling, and that room is always freezing or boiling. We also had mice eat wires in the insulation and cause some power issues.

My plan is to redo below the sunroom similar to a crawl space.
1.) fix gutters
2.) clean out + level + remove mice shit insulation.
3.) instal vapor barrier on ground/foundation and up to 2inches below framing
4.) fix windows (many have broken glass)

Now here is where I have a question of which is best?
1.) insulate ceiling of dirt room with mineral wool insulation. Staple garden fabric below it to limit mice.
2.) insulate walls of dirt room with either mineral wooo or foam batts (hesitant on batts due to moisture trapping?)

If humidity is still high then possibly a dehumidifier.

Thoughts??
