
I can confirm that the baking soda hack makes an awesome pretzel like crust on your sourdough!
I made my usual sourdough recipe
“Say no to shaggy dough” technique
750g high protein Italian pizza flour type 00
450g water
200g bubbly starter
25g pink Himalayan salt
After a 48 hour cold ferment…I dropped the dough into a boiling pot of water with about 1/3 cup baking soda for about 45 seconds and then I scored and baked as usual. Delicious!! And a fun way to enjoy sourdough! Very similar flavor to a Bavarian Brezel.
(I did bake the baking soda for 30 minutes prior to adding it to the pot)
