Am I just Severely Intolerant?

Warning for tmi discussion about symptoms!

I was tested for coeliac last year but tested negative and was told I was just intolerant. But anytime I tell anyone my symptoms (usually not this tmi but the general overview of it) they seem really concerned and ask if I’m really sure I’m not coeliac.

If I eat gluten or have even the tiniest bit of cross contamination (e.g. using the same tongs to pick up an item) I will get really sick. Instantly bloated an entire size up in clothing, terrible acid reflex for days and then constipated for 1-2 weeks, where it then takes another week to very painfully slowly get it all out of my system often causing tears and bleeding… occasionally even causing haemorrhoids. I also get really intense hives occasionally from it too but not every single time but when I do get them it’s all over my legs and arms.

Is it possible I am just intolerant and just really really sensitive? Like I get all these symptoms every time even from the smallest cross contamination like using the same tongs or similar. Or should I look back into getting retested for coeliac?

Edit: I was tested three in my life. First when I was 12 and eating a gluten diet. Second was last year in my 20s by my gp. I was eating gluten free for a few months by this point. I asked if I had to be on a gluten diet for this and she said no but I was skeptical but the blood tests came back negative. Third was also last year when she referred me onto a gastroenterologist. I told him about the second test and he agreed I should’ve been eating gluten for it. He told me they had a different test they could do where you don’t need to eat gluten for it. That also came back negative, but as he is literally a specialist in coeliac I feel like he should know the most so I just accepted I was just intolerant.

Question: how to talk to my psychologist but not get a diagnosis

Hello

I live in Australia for reference and go to a psychologist. I want to discuss my issues with eating but I really don’t want a diagnosis or any information shared with my other doctors. In Australia psychologists can diagnose so I’m scared if I open up about it I will be diagnosed and it’ll be on my medical history permanently. Is there any way I can make sure this doesn’t happen? Or will they diagnose regardless even if they don’t tell me as it could be seen as a risk to myself? I do want to talk to them about it so I can get better and so I’m not so alone in this but I just really don’t want a diagnosis.

Any help would be appreciated thankyou
