Do I just restart with a new cutting? Been waiting around for months with this Manjula

I opened my save and many (but not all) were converted to weird levels like this. The levels were complete but difficult and had weird mechanics (one had red coins that would break blocks when collected). I restsrted my game and the levels went back to normal. What are they and how do I access these again? Here are some pictures of them:

I cut it back and it still does this. It's not every leaf, but maybe every other leaf. Is it drying out too much? Or humidity is too low? I feed it a standard aroid feed and humidity is always 60+%.

It also makes tons of yummy nectar
