Hard to call this a struggle meal because of how tasty it is, and I know Conecuh isn't the cheapest sausage brand but it makes all the difference in flavor along with the Glory brand if you can find it in your area. Otherwise make it with what you can. but for $20 I can eat on this most of the week.

-2 cans Glory pinto beans with onions

-2 cans Glory black eyed peas

-1 can mild Rotel (original if you want more kick)

-1 packet Lipton beefy onion soup mix

-1lb package Conecuh Hickory Smoked Sausage

Mix undrained cans and soup mix in a pot

Cut sausage in 1/2 in cubes and sautee, then dump in bean soup mix

Simmer for 10-15 mins

Add chopped green onions and cornbread if you're feeling rich.

Small collection, but trying to be intentional with affordable but quality pieces that I like to wear.
