Just for comparison, I brought home a container like this full of chorizo that came from a kitchen at Golden Plains Music Festival in March and I finished it in early June. This pictured Coles deli chorizo was purchased 3 weeks ago and it’s mouldy. Mouldy is contamination from dirty hands. They need to wash their hands every time they touch something, including their own faces, hair and their clothes should be washed and clean before they dress at work like the rest of us chefs 😡
