I saw a ton of orchids today

This is at Planters' Market Singapore and the variety of orchids here is just amazing. I ended up buying some for myself but it was so difficult to pick from everything there!

What plants can you absolutely not grow despite being 'easy' plants?

I grow Alocasias, begonias and orchids but I can't figure out Peperomia at all. They're SO sensitive in terms of watering, I water when the pot gets light and if I mistake the moisture levels one time it's instant root rot. But if I leave it dry for too long like a succulent it starts dying too? I have no idea what these things want. My peperomia raindrop is now a sad stump of tiny leaves that keep browning and dropping. Second to that are spider plants, mine was a stump that kept putting out brown leaves before unfurling but it seems to improve now that I'm treating my tap water with aquarium conditioner. They are very thirsty plants from my experience, almost like a fern.
