After the bake I brushed them with a toasted marshmallow syrup. Then used a the kitchen torch to toast marshmallows
I did these as a stuffed cookie, however, the center melted into the base. Which is fine, but I wanted a gooey center. I'll just tweak the filling for next time

Here is the recipe I used, except I subtracted 60 from the flour and replaced it with Dutch processed cocoa.

For the peanut butter center, I used a 3:1 ratio of peanut butter to powdered sugar (and a pinch of salt) and froze it into small pieces. And then forming the cookies around it.

For the peanut butter chunks, I used a 2:1 ratio of peanut butter to powdered sugar (and a pinch of salt), also frozen before adding to the dough.

I bake from frozen at 400 for 15 minutes. These were topped with flaky sea salt before baking

The center was soft and slightly gooey and the peanut butter pieces throughout was like biting into a chunk of peanut butter

Lemon white chocolate cookies, topped with more white chocolate and lemon zest and lemon finishing sugar
Levain style base, with Bavarian cream and vanilla bean paste. Inclusions are white chocolate chunks with waffle cone pieces. After they came out of the oven I topped them with turbinado sugar and blasted them with a kitchen torch to caramelize the sugar.
These taste so good using cake batter extract, vanilla extract and vanilla finishing sugar
The base of the cookie has chocolate, graham crackers, and dehydrated marshmallows. After the bake, I brushed them with a roasted marshmallow syrup and roasted marshmallows with some graham cracker crumbs
Half is feta stuffed olives and pesto, and the other is roasted garlic and hot honey. 85% hydration. Next time, I'll try 90%
I did not use banana pudding in the base. It has real bananas, toasted coconut, vanilla wafers, banana and cream flavor emulsion, and coconut extract.
I had this thought to make a baked cookie taste like cookie dough. I used a few flavor emulsions/extracts in this attempt (buttery sweet dough, brown sugar, butter, cream cheese, and caramel). I used a basic chocolate chip cookie base in this first attempt. And I felt that blend is most reminiscent of cookie dough.
I know miso or lavender or cardamom are somewhat unique. I thought of trying to achieve a cookie dough flavor in a cooked cookie 😅.

I used butterbeer flavoring extract and butterscotch chips in the dough. Then, topped with marshmallows dipped in white chocolate, a salted butterscotch drizzle, and butterbeer finishing sugar

I followed a basic chocolate chip cookie recipe, leaving out the chocolate chips. Then added in low sodium real bacon bits, about 3/4 c of peanut butter, maple flavoring, maple syrup and peanut butter flavoring. Then once out of the oven brushed them with a maple glaze, maple finishing sugar and more bacon bits
