Yugi didn’t have a god card at this point in the tournament since he was dueling it. He was the first player to play against one in Battle City with no prior knowledge and Marik had a five card strategy to go along with it. And with Kaiba’s encouragement, he was able to continue dueling and figure out a way to defeat him.
Mokuba even comments that Slifer at one point was three times stronger than Blue Eyes Ultimate Dragon.

Joey was looking for a challenge since he just beat Espa Roba and Weevil who both cheated, and he was looking to duel any random scrubs which he could’ve but passed on it.
Once he saw Kaiba he wanted to duel him since he was pretty confident in himself at that point.
And they did later duel after Kaiba lost to Yugi again and didn’t have his god card anymore, and Joey put up a good fight despite having his deck infected by crush card.
