My shishito-thai chili hot sauce was a partial success

Had harvested a bunch of ripe shishito peppers, didnt know what to do with them so I figured I'd make a hot sauce. Added all the shishito, a handful of thai chili peppers from the store, couple garlic cloves, some white onion, a lil bit of daikon, and then a lemon that was left over after taking its zest off.

Unfortunately I think the lemon was a mistake, the brine took on alot of the bitter lemon pith flavor and is still noticably bitter in the final product without including the lemon. Probably would have been banger if I hadnt included the lemon but oh well we live and we learn

When life gives you leftover watermelon, you make watermelon wine

Bought too many watermelons for the 4th of july and figured itd be easier to make wine out of it than eating it. Chopped up a big, ripe watermelon, brought it to a simmer on the stove and mashed it down/blended it (didnt add any water) then added about 3lbs of sugar and honey. Attempted to strain it while using a siphon to transfer to the fermentation vessel. Added a packet of mead yeast once it cooled to room temp.

It is currently bubbling away to the point that the airlock can be used as a metronome with its consistent popping. Had to scoop up the pulp i missed in the initial straining as it all got pushed to a thick film at the top from the bubbles

Fermented hot sauce with home grown peppers

I apparently forgot to take a picture of the jar as it was all fermenting. I harvested a couple jalapenos, shishitos, and chile pequins from my garden and fermented them for about 7 days with garlic and daikon (store bought unfortunately).

The hot sauce is a bit chunky, bordering on salsa consistency, but its delicious. Its a garlicky and earthy umami flavor from the fermented daikon up front, then lingers as a very spicy probiotic vinegar kick on the tongue. The chile pequins bring alot of heat but arent overpowering the other flavors

Peter Watts is somehow a prophet; my take on Freeze-Frame Revolution

I'm gonna get my bias out of the way, I absolutely adored Blindsight and Echopraxia. With that said, I think Freeze-Frame Revolution is an impressive novella that hits at the mainstream appeal and isn't just "hard scifi for the far ends of the neurodivergent spectrum"

Spoilers ahead obviously, so maybe don't engage with this post if you are curious about reading the book:

Blindsight and Echopraxia already gave me the sense that Peter Watts is tapped into the akashic records, his imagination for near future technology has been scary believable. For FFR in particular, what really resonated with me was listening to Sunday's internal monologue as she came out of her AI psychosis and came to understand that Chimp is essentially just a heuristic algorithm, taking X input and providing Y output to move certain metrics to the expected value range. With the advent of LLMs becoming mainstream, this sort of deception and discovery has happened a shit ton (see: people who got into emotional relationships with gpt-4o)

I also was really impressed with the layman's explanation of how they were going to abliterate / de-censor a copy of Chimp. The book seriously reads like someone in 2025 looked at the current state of open source LLM development and thought "I will use that as a plot point in my scifi novel". Of course this book was published in fucking 2018 however, two years before even gpt3 released, and many years before the practice of de-censoring open source models was a thing. I understand that LLMs were known before then, but I consider the release of gpt3 as the tipping point when AI development and productivity use became mainstream.

I haven't read through the sunflower cycle short stories yet other than hotshot but I am glad there is more to read in this setting, as FFR left me wanting much more than the novella length allowed
