Everything that happened to Sherry also happened to Jill, and vice versa. (infections, vaccines, being lab rats, non-aging, etc)

The file "The G-Virus" in RE6 confirms that Sherry aging stopped, and the specific mention that it stopped at age 20 is in the Japanese version.

There’s so much more, like Leon saving Sherry and carrying her to the train, Sherry helping them survive by stopping the train, and so on... Why does everyone criticize RE3R so heavily for cutting content, yet go so easy on RE2R, which did exactly the same thing?

They destroyed the relationship between the three of them and cut 50% of the game. The fact that the remake doesn't replace the original—or even come close—only goes to show that this game is one of the best in the franchise.
