We just became a Nivada AD and are putting watches into the case today. As hobbyists, how deep do you expect an AD to know the history and specs? We have super knowledgable people on our team that know it in depth, but then others that wouldn't be able to explain the movement types or might not know the different collections without training.

Knowing what enthusiasts would expect walking into a store would really help us get our whole team trained up so any feedback people have would be greatly appreciated.

I’ve been on the hunt for udon noodles for weeks now and I’m surprised at how hard it is to find.

Talking real, pencil diameter thick udon. Bought a pack at Whole Foods last week that was still way too thin. Anybody have recommendations?
