Backsplash prep

After removing our backsplash our drywall looks like this. How do we prep this area for new backsplash. Was originally just going to buy a layer of hot mud on top but I’ve read that you need to seal the drywall paper before mudding. Is this step necessary? Will just mudding suffice?

Wood staining

Staining red oak

Any advice on good stain colors for red oak. I have red oak cabinets that were stained with the classic 90s orange. We have sanded the cabinets down completely but are having a heck of a time finding the right color stain. Want something a little darker and definitely neutral. Everything I’ve tried pulls so orange.
