So I was a big twihard in middle school. I read all of the books, went to every premiere. My older sister has recently begun watching the movies with me out of curiosity and it's been a trip. She was a bit too old for the franchise when it came out but it's been fun to relive it with her. Admittedly, I haven't read the books probably since middle school. One thing I can't understand is the Charlie scene in Twilight.

If they were so concerned with Charlie's safety, why did they leave him in that house? Victoria's tribe could've easily killed him, even for fun. It seemed like Bella was more concerned that Charlie just wouldn't know why or where she vanished to, rather than the fact that he could've been killed.

Am I misremembering or was this just for the plot? 😭
Preheat oven to 400 degrees
Wash four sweet potatoes. Poke all over with a fork to release steam while baking.
Coat in olive oil and sprinkle with sea salt.
Cut the top of a head of garlic, drizzle with olive oil and salt, cover in tin foil and add to your pan.
Cook for 45 minutes until fork tender.
Filling:
15oz can black beans
1 cup of sweet corn
One jalapeno finely chopped
1/8 cup red onion
3-4 tbps of Diced Chipotle peppers in Adobo sauce
Bundle of cilantro to taste
1-2 green onion
Cumin
Smoked paprika
Healthy drizzle of honey
Half a lime
Salt & pepper
Guacamole-
Two ripe avocados
3-4 rough chopped grape or cherry tomatoes
1/4 a jalapeno, finally chopped
3 cloves garlic
Cilantro to taste
Squeeze of lime
Salt & pepper
Once the sweet potatoes are ready, spoon out innards and combine with beans & corn mixture, leaving some potato in the skin to hold form. Add your roasted garlic.
Fold together, scoop back into your skins.
Optional: Top with cheese.
I used a sprinkle of feta, you could use pepper jack, etc.
Return to oven for another 10 mins.
Top with guacamole.
Option for sour cream, Greek yogurt, etc. I added a dollop of plain Greek yogurt on the side.

I absolutely adore Indian food and love how accessible it is for us vegetarians. Only, I've never properly cooked it for myself! A few questions for the veterans and those with a heritage palate- what are some nonnegotiable ingredients I should have on hand to start? What's the best dish for a beginner to cook from scratch? How do you feel about those from other cultures attempting to cook this cuisine? Is it best to leave for the professionals or is it worth a shot?

Pickled Slaw:
Julienne-
1/2 head of Red cabbage
1-2 Carrots
1-2 Radishes
1/4 a Yellow onion
Stalk of broccoli
Brine:
3/4 cup vinegar
1/2 cup water
2 tsp sugar
1 tsp salt
Dash of garlic powder
Dash of red pepper flakes
Heat on stove until sugar dissolves, pour on slaw, bring to room temperature, then pop in the fridge
Avocado "Crema":
One large avocado
1-2 jalapenos
Fresh cilantro, maybe 3/4 cup
Olive oil or avocado oil
Water
Garlic
Salt & Pepper
Fresh lime
Optional: sour cream or Greek yogurt, though it tastes creamy without
Blend to creamy consistency, then put in the fridge while preparing cauliflower
Roasted Cauliflower:
One head of Cauliflower chopped into even pieces
Cumin and/or taco seasoning
Garlic powder
Onion powder
Smoked Paprika
Curry Powder
Salt
Pepper
Drizzle with olive oil and sprinkle on some breadcrumbs
425 degrees for thirty minutes,
toss half way through
Optional: broil on high 1-2 minutes
While the cauliflower is in the oven, brown up some flour tortillas
Coat the tortillas with avocado crema, add your roasted cauliflower, and top with pickled slaw, sliced jalapenos, cilantro, and fresh lime 🍋🟩
