Im looking for a micro bevel finishing stone at around 4000-6000 grit.

Super nice convex grind to it especially for such a thin blade.

this subreddit knows BYs inside and out, and there have been plenty of NKDs, but this one feels especially meaningful to me — and I’m sure it marks a new era for Konosuke as well. I wanted this knife for a long time, and it finally happened. It looks even better in person than I expected.

Take a look at the brand-new BY logo — I absolutely love it!

Dimensions are 222 mm x 53.7 mm, and it weighs 200 g. It has a very nice convex grind, a little more pronounced on the right side of the blade, and it looks flawless to my eyes. Fit and finish is superb.

This may be a bit controversial, but it wouldn’t surprise me if this is a step toward phasing out the FM line and continuing with their new mindset of undisclosed sharpeners, etc.

The knife looks amazing in person, and I did my best to capture that in the photo. I also found the bag itself to be something I’ve never seen before, so I wanted to share it here. I was also gifted a nice leather saya keychain.

The only thing I am a bit bothered by is the matchi gap finish, I mean its their signature move right? And its not perfect.

I’ll remove the lacquer next and put it through a proper test. Stay tuned.

Oh man, I'm finally starting to find the knives that really speak to me, and it's been quite a ride.

I recently picked up a Mazaki Hon San Mai Blue #2 in 250mm, and I have to say, this knife has completely exceeded my expectations.

It's a beast on paper: 247mm edge length, 55.7mm height, and 232g. Those numbers suggest a large, substantial knife, but that's not how it feels in use.

The length is absolutely spot on for me. Don't get me wrong, it's a long knife, but it's so maneuverable and controllable that it's almost laughable for a blade this size. Normally, you're very aware of a 230g knife in hand, but this one somehow disappears. It immediately feels like an extension of your arm, and when it's time to cut, oh it will effing cut!

The balance point sits roughly 2.5cm forward of the handle, around the kanji area. Whether intentional or not, the balance feels incredibly well thought out. The knife feels precise and responsive, and I always feel in complete control of the edge. As the handle would be chosen specifically to balance it perfectly.

Oh and about the handle, just look at the fitting around the tang, its immaculately filed to a perfect fit. A rare sight to see. The handle is also extra chunky, i never held a thicker handle in my hand. 

I would like to compare the filling to Toyama. Toyama is unbelievable cutter but its feels like a tool, it is front heavy and it gives you the filling of ripping thru the food, the Mazaki is maybe more subtle, more refined, more precise. I would say Toyama hides a bad technique much better than a Mazaki does. 

Then there's the grind.

Near the heel, there is subtle S-grind to it than it transitions into a very pronounced convex grind. Food release is excellent—honestly better than my Masashi Kurouchi, which is saying something.

What I find particularly interesting is how distinct the knife feels along its length. The heel is thick, powerful, and authoritative. The middle section feels surprisingly laser-like. Then there's the tip.

The tip is ridiculous.

The effing tip, its unbelievable, It's better than some higher-end Sakai tips I've used, no doubt about it. Its so precise i cannot wait to do garlic and shallot and let me tell you again its 247mm EL : )

Oh, and I almost forgot about the cladding. It's unbelievably beautiful in person. It has this mesmerizing, cloud-like appearance with milky patterns that seem to shift and change depending on the light. I'm also attaching a video because photos really don't do it justice.

Hopefully I never have to make the choice, but if I could only keep one knife from my collection, this might be it.

this is my first NKD, and I wanted to pick something special - not one of the hyped-up knives we’ve all seen numerous times.

I went with: Kaneshige Hamono Yamato Oboro Shirogami #2 gyuto 225mm.

I bought it from a user on Reddit. The ad stayed up for a few days, and when I first saw it, I really thought it resembled the Kono BY a lot.

Then I started digging into this bad boy, I learned it’s actually from Kaneshige, the sister company of Konosuke, which triggered my appetite even more. I wanted it badly. It was about one-third of the price that BYs normally go for these days. I was really, really looking forward to this knife, and then it got lost somewhere in Lithuania for about two weeks. Then, suddenly, it appeared on my doorstep.

From the first moment I picked it up in my hand, I knew this knife was going to be special. I polished it with some jnat powder to make it feel a bit "more new to me", and I went straight into business. Its unbelievably reactive, coming close to anything already leave a patin :)

Knives like this can be big food magnets, but to my big surprise this one has one of the best convex grinds I’ve experienced so far. Super-convex throughout the entire length of the blade. BTE is unbelievably thin, proper laser territory. Amazing.

Fit and finish is super high, definitely a Konosuke tier.
