Looking for somewhere to start

For a long time I've been fantasizing about going on a multi week trip in the woods with minimal supplies, by myself or with a few friends. I grew up being in the boy scouts and have spent some time in the military, but I have very little experience truly roughing it for longer periods. There is so much to learn, and I don't want to get in over my head by pushing my limits too soon.

I have some basic skills down, but I want to get into all the things; hunting, foraging, making tools, and all the little tricks and bits of knowledge. What are some areas I need to learn about first? And what are some good resources for me to start with? I'm not obsessed with getting all the perfect brands of gear; that can come later. I want to learn the tangible skills first, and then nerd out about all the packs and knives later.

For some reference, I am currently in NC for work, but will be doing most of this in and around the Chihuahuan desert in West Texas where I'm from.

Just bought a Lile Bowie

From what little I've read about him, apparently Jimmy Lile is a legend in the knife community. I've never heard of him, but I'm not really a knife guy.

It's a Crown Stag Bowie. Anyone have info on the maker and model?

Picked these up in December as a Christmas gift to myself, without having done too much research. I fell in love with the aggressive texture, but more refined silhouette and black on black color. They're from Vaccari, which I haven't seen here much, at least initially. Is there a reason for that?

Any idea what cut of alligator they are? From my limited knowledge I might think a head cut, but correct me if I'm wrong.

Any styling ideas? I've just been throwing them on with everything I wear; jeans and neutral colored trousers with textured/heavyweight solid colored polos, sweaters, button ups, and t shirts. Sort of a mismatch with the boots, but I feel like the subdued color makes it work. But I also know nothing about style lol
