Sailing in July for 7 days on Nieuw Amsterdam, is $1000 upgrade to a Neptune suite from Signature worth it? We are traveling with others that wouldn't be in a Neptune Suite.

I've been following a flight on AirFrance/KLM/Flying Blue and get availability alerts from AwardFares or Seats.aero that there are many available seats. I call or go online to book and nothing is there.
I've been able to get all the way through check out, getting a booking number, then it errors out. Now I have 100k points trapped at AirFrance and what seems to be like a useless booking technology.
What are the chances I'm able to get this ghost availability? Am I wasting time trying to book? Over the past 2 weeks I've gotten several availability notices, act on them within minutes, and nothing is there.
I'm looking at the July 2027 7 Day Glacier Discovery Southbound and all of the high tier rooms are sold out. Are these really all sold out or do they not open the availability till closer to the date?
If they really are sold out, how far out do I need to be looking to book these?

I submitted a status match request about four weeks ago but without any email confirmation I’m wondering if it went through.
I called and the agent told me 6-8 weeks, while the website says 2-4.
Has anyone been through this recently? What was the wait? I’m matching to Delta Gold
