Soft crust technique!!

First time trying this technique but I loved it so much I HAD to share!! If you want a soft crust & a fluffy crumb try this:

Recipe for 2 loaves

200g starter
675 g water
25 g olive oil
1000 g flour
Mix (add flour after mixing the other ingredients) & let sit for about 45 minutes
Sprinkle 20 g of salt and mix with hands, let sit for 30 minutes

Now for the fermentation process, the dough was a lot stickier than I’m used to so I switched to coil folds after one round of stretch & folds. About 30-45 minutes between each set

Bulk fermented for about 5 hours
Divide the dough into two & shape
Bench rest for 20 minutes
Shape again & place in bannetons

Cold ferment for 18-19 hours

Preheat dutch oven at 500 degrees for 45 minutes
Bake covered at 450 degrees for 30 minutes
Bake uncovered at 450 degrees for 5 minutes (IMPORTANT: place a tray under the dutch oven during the uncovered bake)
Immediately wrap in a damp cloth

AND VOILÀ!

Advice for someone who recently decided they want to become a FA

Hi there! I’ve just recently become interested in being a FA. I’d definitely prefer a national airline like Southwest or Delta. After some research, I found out becoming a FA is highly competitive and may take a few years of applying.

Since there’s not much I can do now except wait for an opening, do any current FA’s have any advice? And do openings usually happen the same time of year?
