Looking for feedback on my next cider batch

Hello there, fellow cider lovers

I'm planning to make my next batch of cider in a few weeks, and I'm looking for some advice/feedback before I have at it. I'm planning to use the "traditional method". This method is usually associated with sparkling wines, but I've done it once before and the result was fairly decent. So far I've been using pasteurised juice and added commercial champagne yeast, but this time I want to use wild yeast, so I wanted to run it past you in case there's something about my plan that I should change.

My plan is:

- In a few weeks I'm going to acquire 25 liters of freshly pressed apple juice from a local farmer.

- I'm going to add the apple juice to a stainless steel vessel with an air lock and let the juice ferment without adding any commercial yeast.

- When the activity dies down, I'm going to make a syrup using 3 liters of the fermented cider and 600 grams of sugar.

- I'm going to add 1 dl of this syrup to 30 champagne bottles (750 ml) and transfer the cider from the steel vessel to the bottles. This equates to 20 grams of sugar per bottle, which should result in a final pressure of roughly 6 bars after secondary fermentation.

- I'm going to cap the bottles using crown caps and store them horizontally in the cellar for secondary fermentation. Probably somewhere around 4-6 months at 12 degrees celsius.

- After secondary fermentation, I'm going to place the bottles upside down in a riddling rack and slowly turn the bottles over the course of three weeks to accumulate the yeast beneath the crown caps.

- I'm then going to cold crash the cider by placing the riddling rack in a 0-5 degrees celsius room for 3-5 days.

- I'm going to use dry ice to freeze the necks of the bottles before removing the caps with a disgorging key and shoot the frozen yeast and particles that has accumulated beneath the cap out of the bottles.

- Before corking the bottles, I'm going to add 45 ml of syrup (liqueur d’expedition) to each bottle. The syrup will consist of 450 grams of sugar, 1,5 grams of campden and 2,5 grams of potassium sorbate in 1 liter of water. This makes 15 grams of sugar per liter of cider, which should result in a pretty dry (but not Death Valley dry) cider.

- Finally I'm going to let the bottles rest horizontally for three weeks in the cellar before crossing my fingers and opening a bottle to judge the result.

What do you think? My last batch of cider was made using these steps, the only difference being that I used pasteurised juice, commercial yeast (EC-1118) and more sugar in the final syrup. The result was fairly decent, but a bit bland. It tasted a bit too much like a sweet sparkling wine. This year I want to use wild yeast, and less sugar, to make it more interesting.

Do you think the same procedure will work using wild yeast?

How do you avoid armies getting stuck in the street?

I'm having issues with my armies getting stuck in single lane streets, giving those pesky raiders free range to my city. How do you guys avoid this? Wider roads?

Suggestion: I'd like to see map seeds on game screen

What the topic says. I see a lot of screenshots where I'd like to play the map I'm seeing. On Reddit it's fairly easy to ask for the map seed, but that's not always the case on other platforms. Could you please consider having the map seed visible in the top bar of the game screen?

Trenger råd om pickup: D-max eller Hilux?

Hei

Just returned from holiday with a renewed love for Britons

As the title says; I've just returned from holidays in Croatia. At the hotel, there was a good mix of Scandinavians (such as myself), Brits, Italians and some other nationalities that I couldn't precisely place.

After a week or so at the same place, you sort of get to know the people there, and you overhear couples talking during meals, at the beach and so on. During my stay, I was reminded of how similar Brits are to Norwegians in how you speak to one another, your humor, your quiet politeness and how you relate to one another in general. I didn't meet or see a Brit that I didn't like the whole time I was there - it was great! I love you, and I'm glad to have you as a neighbouring country.

There's no question or other point to this story. I just wanted to let you know. I'm assuming most people from Britain don't speak Norwegian or any other Scandinavian languages, so I'm guessing you rarely have this sort of insight when you travel.

PS: It was a rather small "adults only" hotel on one of Croatias many islands, so the guests were probably a somewhat homogenous group of people despite the different nationalities.
