Beginner female returning after 15 years - Hardtail MTB vs Gravel bike for Colorado?

Hi everyone! Haven't ridden in 15 years, doing weeks of research, and keep going back and forth. I need some real-world advice.

About Me & Goals:
5'4" female, athletic/mountaineer build, based in Colorado.

The Goal: Weekend riding, eventually exploring all over CO.

The Terrain: Crushed gravel (like Santa Fe Regional Trail) to start, paved alpine paths (Vail Pass), and eventually light green MTB singletrack (like Red Rock Canyon). Absolutely zero interest in road cycling.

Budget: Under $1,500.

The Dilemma:
I recently test-rode a gravel bike and felt incredibly unstable on the drop handlebars. No Matter how much I research, my research keeps pointing me toward a hardtail mountain bike.. specifically looking at the Specialized Rockhopper, Trek Marlin, or Liv Tempt 2. The flat bars and wide tires feel much more secure.
But I'm worried: Am I dismissing gravel bikes too quickly based on one uncomfortable test ride? Will a hardtail be too sluggish on paved/crushed gravel paths, or is it the perfect confidence-builder for getting back into the saddle?

My Questions:

  1. For CO recreational trails (gravel, paved alpine, light singletrack), which style genuinely makes more sense for a returning beginner?
  2. If you were in my shoes, what specific bike would you recommend under $1,500? (Open to suggestions beyond the ones I listed!)

Thanks in advance for the help!
