How do you build a script?

Apologies if there a previous post covering this.

I see lots of posts from people asking for feedback on their custom built scripts. But I always wonder how people critiquing do so. What do they look for? Where do they begin?

If you were to give advice to someone before they’ve even chosen their first character as to how to build a script for the first time, what would it be?

Pulled Pork, a far more relaxing cook than the beef ribs from last week

This was a punt of a joint from Tesco for £7.20.

Standard fair. Weber kettle set between 120-130. Apple wood smoking wood. Wrapped at 75c with butter and stock. Took off the kettle at 95c and in the oven to hold at 70c for an hour.

Toasted brioche buns, crackling that was cooked separately from the joint, coleslaw (usually make my own but couldn’t be arsed this time), and bbq sauce.

Potato salad as an accompaniment.

Today I learnt a stressful cook and a successful cook are sometimes one and the same

Beef short ribs from the butcher.

Dry brine salt, pepper and garlic powder overnight.

Weber set up with the slow and sear deluxe with water tray full. Temp set at 120 and holds stable for 20 mins, meat placed in bbq.

Wind picks up, temps everywhere, meat temp shoots from 15c to 40c in an hour. Panic sets in for too fast a cook.

2 hours in, bbq temps drop and meat stalls at 65 degrees, can’t budge it any higher.

Decide to wrap, sorry, but fuck it, butter, beef stock, in you go.

Meat temp drops after 30 mins.

Takes another hour to get to 75c. Got friends over expecting to eat before a fortnights time.

After 5.5 hours, out of no where, hits 95c and hold it for 20 minutes. Probes like the first time I…

In the oven set at 70c for an hour and a half to hold.

Result = The best ribs I’ve ever had, whilst being the most exhausted I’ve ever been during a cook for no reason, and 4 bottles down of German Helle Larger I was saving for later in the evening.

Visiting for a week next week and always like eating local cuisine. Any recommendations for local dishes/drinks or locations. Travelling around the island so no limitations on location. Thanks in advance.

Smoked Lamb Shanks

Smoked using oak chunks before braising in red wine, beef stock, vegetables and herbs and wrapping up.

Reduced the stock down to a sauce to finish with flatbreads and a bulgar wheat salad to keep it lighter for a hot day.

The shanks cooked too quickly even with very stable low and slow temps, resulting in a good moist finish, but not a pulled consistency.

Just had the craziest game

I was the evil twin paired with an artist in a custom script where my yag demon had atheist, cult leader and amni as bluffs.

My demon told me day 1 to just claim atheist who was told you’re also the evil twin.

I caused chaos in town by claiming I pulled the atheist token, but received a card night 1 saying the artist was my good twin, called the story teller saying I was confused and that all I was told in return is that no mistake was made.

I was then killed night 3 by my fellow minion god father and day 4 my demon was on the block. I was told a likely damsel candidate by my godfather, and then guessed correctly winning the game for evil.

No idea how we did it. It was only my 7th game, 1st time outside of TB and what a ride it was.

Easily one of my favourite cooks, the cedar planks are incredible.

Scorched it directly without food for 5 minutes before flipping then placing the food and moving it to indirect.

After feedback from my previous post around how many times people reuse the planks, I may test using it as smoking wood rather than trying to reuse.
