I was smoking a pork butt today at 275. About 5 and a half hours in I added more charcoal. About an hour later it was struggling to stay at 245.
Smoke was pouring out of the charcoal box. I think it was clogged up with ash. I shook the ash filter and a bunch fell out, it got right back up to temp. I'm thinking adding the new charcoal compressed the ash.
I bought a propane grill for $99 at Home Depot a few years ago. I always wondered what the hell this thing is?

So I spatchcocked my 1st chicken. I have in on at 375, internal is at 134. The skin is looking bland as hell. I dried it before hand seasoned, and hit it with some duck fat spray hoping it would crisp up. Any recommendations on getting a crispy skin?
I'm using a masterbuilt gravity. I'm considering going skin side down maybe once it hits 150. Or just throwing it under the broiler when it hits 155-160.
