I’m new to using an Ooni Pizza Oven. I pulled this one out of the garage … it had been sitting around unused for about two years. Is this a good flame or do I need to clean it or do something else?

Trying my first turkey on the Joetisserie … almost done! It’s a practice run for Thanksgiving.
It’s a lot of work, I know … but about every four to six weeks I like to take my Kamado Joe Classic II’s firebox apart, brush off the loose ash, vacuum it out, and put it back together.
I use my Joetisserie and basket a lot, but have never used the basket’s flat panels. I planned to cook some chicken breast last night and decided to use the Joetisserie instead of the indirect method on the grates and Divide and Conquer rack.
I think it worked well!
The chicken breasts stayed put in the basket while spinning and there was enough room to use the internal meat thermometers.
Cooking a whole chicken tonight on the Joetisserie … has about another half hour to go!
I just got my Kamado Joe Joetisserie basket today … anyone ever use one … what can you make besides chicken wings and vegetables?
