I tried to cook dorayaki pero ung pancake ko.... parang ang flat? Hindi siya un parang mcdo or jbee pancake... is it my pan is too hot? Ung edge ng pancake ko crispy 🥲

Hello, mostly nakikita ko autolyse sample is for sourdough sa youtube. Is it okay lang for any type of breads like pandesal, cinnamon rolls, etc? Para hindi rin siya straining / overheat for handmixer?
Also, if nagautolyse, need pa ba iknead ung dough?
