How can I get smoother layers?

I really like the results of the oranges and the sink, but still have a hard time with getting smooth layers. Any advice?

Need help making water more realistic

any advice? I have noticed the shadows are too saturated, but apart from that, idk why i can’t make water seem realistic… Light and reflection are a tricky thing
