Pumpkin cheesecake with chocolate graham cracker crust

Pumpkin cheesecake with chocolate graham cracker crust

I made this a few days ago but someone in a different thread wanted to see. It came out perfectly but I might have made the crust on the bottom just a little to thick. Either way it was freaking delicious.

So I meltdown

OK to start off I am 36m audhd with BP2 and my husband is 36 with adhd. Anyway day starts off great. Its a little hot and my weather app said there was a chance of rain (this is important) but all of that was fine so far. I was doing my routine.

Im dancing, singing, voguing, loud music and doing runway all the stuff I do when I have the house to myself and I can be my 100% true authentic self. So as im doing all this the sky keeps getting more gray. Still some sun out and everything.

My husband gets home from work and we decide to take the dogs out for a walk. That started out great, I was having fun and everything but on our way back about at the half way point I hear some thunder. It was far enough back that it could just been a truck or something so I dismissed it.

About 5 minutes after that I heard thunder again but it was closer and THAT immediately set me on edge. Thunder is a big trigger of mine. I cant stand the sound, the moment I heard it I started panicking inside. I didnt wanna have a public meltdown. I wouldnt be able to move. Thunder literally renders me into a fetal mess.

We picked up the pace to get back to the car faster and we were like 20 steps away from the car when the first drop of rain hit me in the face and set me off. We barely made it to the car and I could feel the tremors snd the tears coming. When we got home I immediately crashed on the floor and started sobbing.......and my husband didnt make any effort to comfort me.

I ended up going to my panic room once I could move to try to calm down. I ended up passing out for half an hour and when I woke up I was not in a good mood. Now my husband isnt even talking to me. I feel so embarrassed and ashamed. Nothing is helping me feel better. Im so exhausted. Im honestly trying not to have another meltdown as I type this. Like the crying frustrated kind.

Im terrified of even bringing it up at this point. I dont really have anyone else to talk to about this so I apologize for this long ass story but thanks for reading it anyway.

Tldr: I had a meltdown and it didnt end well lol.

Sharks rolls!

I made some copycat Texas roadhouse rolls in the shape of sharks lol. They turned out perfectly!!

EDIT: Here's the recipe i used. Its for high altitude though so please adjust accordingly.

1 cup warm whole milk or water, about 105-110F 2 1/4 tsp active dry yeast or instant yeast 3 tbsp sugar 1 tsp fine salt 1 large egg 1/4 cup unsalted butter, melted 3 1/4 to 3 1/2 cups all-purpose flour

For finishing: 1 to 2 tbsp melted butter

In a large bowl, combine the warm milk, yeast, and sugar. Let it sit for about 5 minutes until slightly foamy.

If using instant yeast, you can mix it straight in without waiting, but a short rest is still fine.

Add the salt, egg, melted butter, and 3 1/4 cups flour. Mix until a shaggy dough forms.

Knead for 8-10 minutes by hand, or 5-7 minutes in a mixer, until smooth and slightly tacky. At this altitude, resist adding too much extra flour too fast. Add only enough so the dough is soft and manageable.

First rise, put the dough in a lightly greased bowl, cover, and let rise in a warm spot until about 1 1/2 times its original size, not necessarily doubled. About 35-50 minutes (I go by looks not time)

At this point you'd separate the dough and shape it into squares or whatever but I rolled mine out on a lightly floured surface and then I used a cookie cutter.

Second rise Cover and let rise until puffy and touching slightly, about 20-35 minutes.

Bake Bake at 375F for 14-18 minutes, until golden brown on top. Finish Brush with melted butter right after baking.

So not sure what plants this is. I got it in a pack of 20 and I honestly wish that they were at least labeled in a way I could identify lol.
