What do you do when the enemy bands counters to dive?

I recently had a game where an enemy team banned every type of counter to dive, and they picked a heavy dive comp and we couldn’t do anything about it. The tanks were pretty much useless the whole match because the healers were too busy pattycakeing whole time just to stay alive.
I’m not even blaming anyone. I just genuinely don’t know what to do in that situation.

DM keeps saving the enemy’s constantly

This has been an ongoing problem that got really bad yesterday.
This DM sometimes has a problem where he set up one of those unwinnable battles where, we’re supposed to run away, but we end up, outsmarting the enemy’s and winning the fight.
But every single time that happens, the guy magically is able to teleport away. This has happened at least four times. Even with counter spell. On the off chance we happen to beat their spell level they use a legendary resistance that they somehow had.
after the fights over, we don’t get anything. On top of that as well when we see them again, they are buffed to a crazy amount where we can never beat them unless we’re level 20. Forcing us to run or die.
(One time they had an attack that did double the damage of finger of death. We were level 6 at the time)
When we asked him about this, he said that we shouldn’t try to win every single fight and that expecting loot constantly is unfair.
Is this a fair view to have? Are we in the wrong for being upset over this?

One shot where the boss and the players have to team up mid fight.

So pretty much the crew is gonna be fighting against a adult blue dragon.
But once the dragon hits half health, there’s gonna be an item that both of the groups were fighting over I’ll come up with the details later.
But in short, it will spawn in a bigger threat that both of them will have to temporarily team up to fight against it and what happens afterwards is up to the players

The hard part is, though I can’t figure out what would rival a beat up party and adult blue dragon, and if this idea will even work well, what do you think?
i want there to be more to one shots that isn't just fight the boss and win as a lot of the people in the group i am do that and i want to add more to it.
