homemade Lemongrass Curry Soup, with Rice Noodles and Tofu

delicious, easy, and quick.

I just fried off some spring onion and lemongrass in oil, added some red curry paste, coconut milk and some veg. stock, added in my tofu, mini bell peppers and broccolini, and seasoned with veg. "fish" sauce and soy sauce, sugar and a little bit of lime juice.

Threw in my soaked rice noodles at the end for a minute to soak up all that delicious flavor.

So good ~

Asparagus Risotto~

People keep saying Risotto is a hard dish, but it really isn't - it's just a bit labor intensive.
Super tasty and fresh though!

It's just a Risotto Bianco base, with Asparagus added in at the half-way point. Nothing fancy. But so delicious.

2 Cups rice, 1/2 cup rice vinegar, 4 tsp sugar, 1 tsp salt, and fillings of choice. Roll with Nori seaweed sheets.

work intensive, but so good and delicious!
