Perfect 3 British cheese cheeseboard

Help me in my quest to perfect my cheeseboard.

The rules:

Has to be cheese

Has to be British

Has to be 3 of them

Has to be generally available in a supermarket, top points for Tesco/Sainsbury's/Asda/Morrisons, entries from Aldi/Lidl, M&S and Waitrose accepted but not encouraged.

My current effort is a blacksticks blue, red fox and kidderton ash. I feel improvements can be made particularly on the soft cheese.

Trying to determine what stitch was used for this blanket.

An elderly friend made this blanket for our baby and I'd like to make a second one. She thought it might be Moss stitch but couldn't remember.
