I was not prepared to do 60 miles an hour in the rain...

8 lbs of bone in pork butt, deboned, cut into cubes and fat trimmed. Tossed in my ninja pressure cooker with a bit of avocado oil and 1 pack of taco seasoning for every 2 lbs of meat. Tossed in a chopped onion, a couple spoonfulls of minced garlic, and a cup or so of orange juice. Pressure cook on high for 45 minutes, quick release, and shred with a pair of forks. Skimmed the transmission fluid off the top and saved it for frying

Carnitas with coleslaw(plain), extra sharp cheddar, homemade pickles, with Kewpie Mayo, and a low carb tortilla. Fried and pressed in leftover grease collected from the pot and rendered from the trimmed fat. Also regular carnitas with cheddar.

I don't like fishing chewy globby fat out of the meat after its cooked so I put all the trimmings in some cheese cloth and tossed it on top.

Good for you? Hell no, but i just starved myself for months to pass a physical so I'm celebrating.

As far as I can tell, I can't physically see the brake pads no matter the angle.
