This hobby inspired me to get a new job

My cdl finally got me in the door with a company who will teach me to drive the big yellow things. For now I'm just hauling the dirt.

First tri tip. Holy smokes

Smoked at 200 to 120 internal in the thickest part, seared on the grill at 500 for 4 minutes each side.

Easily the most delicious thing I've smoked so far

I didn't play enough mudrunner before I got this job...

Got stuck for the first time in over a year (good record for the places they send me) wrecker said it was good I stopped trying to get unstuck when I did, or I would have ended up in the ditch and it would have been much worse to fix.

Advice for a beginner

First post here. I got my first cheap upright electric smoker and I've been doing a ton of reading to learn how to do this right. I've had two unsuccessful smokes so far and I realized that I'm taking advice from people without knowing their situation.

Wrap the ribs don't wrap the ribs use a water pan don't use a water pan.

Can anyone give me specific advice on special smoking techniques for altitude? I've learned the water pan is extremely necessary the hard way and I don't want to keep ruining expensive meat. What are your rules and experiences for smoking at higher altitudes?
