Are osage saplings worth working?

Are osage saplings worth working?

They seem mostly sap wood. 3" or so I'm diameter.

What finish for the top?

Ignore the mess. Finishing up my first bench. Still a lot of work to do, but starting to think about the end. What finish do you guys use for your work surfaces?
