Help! To buy or not to buy

Looking at stepping in PlayStation after a long time on Xbox, so I haven’t played any single player exclusives that have been out for a roughly a decade.
I’m thinking of buying the Pro and PSVR2, and was wondering what games people recommend? And what VR games people recommend and if VR has a good amount of supported games now? I used to have a PS4 Pro and PSVR but the lack of content for VR for it was an issue. I also mainly played on Xbox socially hence why I never dipped into exclusives such as last of us etc at the time of having a PS4 Pro.
For context, I enjoy single player story driven games such as Mass Effect, Cyberpunk, Star Wars Jedi.

VR & Console

Recently I’ve started playing MSFS2024 again on XSX, and I’m looking at playing the game in VR. I’ve played both 2020 and 2024 since launch in my Xbox Series X and use a velocity one Flightstick.

As I’ve searched through forums etc, my understanding is that on xbox, VR isn’t supported as such and it’s streamed with the Quest instead via cloud services? Or is that wrong?

Now I don’t have either a PS or PC, so I’m looking at purchasing a PS5 Pro or building a PC. Note that the PC is double/triple the price of the PS5 Pro, so budget wise, I’m more inclined to a PS5 Pro.

On PS5, it’s supported with PSVR2.
PC Is supported with various VR options.

I’ve previously owned a ps4 pro and psvr so I don’t expect the graphics on either VR to be exceptional, especially with a more demanding game such as this sim but I’m aiming for that fun/immersion without too much of a setup.

From people that either own both, played both or switched, what do you recommend?

Flight Sim Build

Looking at building my first PC, mainly focused on playing flight sim & other games I can’t get on console. I may shift to PC gaming but I like console gaming for ease/convenience. The PC won’t really be an RGB showcase either.

After researching, I’ve come to a rough build idea listed below. Would appreciate feedback on what I could change for better or if there’s more affordable options just as good or very close in comparison as building a pc now with the prices is a bad time 😅 I’d like the PC to last a fair few years given the specs I’ve listed and costs associated with the build.

CPU:
7800X3D or 9800X3D - they fluctuate in price and sometimes come close, say within $80 AUD of each other.

CPU Cooler:
AIO: Lian Li Galahad 2 or ARCTIC 3 Pro or NZXT Kraken
OR
Air cool: Be Quiet! Dark Rock 4/5/Pro or Noctua NH-D15

With Mobo:
B650 MSI MAG Tomahawk (unopened, can buy new from a friend bundled with a PSU mentioned below)
OR
B850 Gigabtye AORUS Elite
OR
X870 - Gigabyte Eagle or MSI MAG Tomahawk

PSU:
Corsair SF1000L 80+ Gold (unopened, bundled with B650 from a friend)

5080 GPU:
Gigabyte Gaming OC
Gigabyte Aero OC
Gigabyte Windforce OC

32GB RAM CL30 6000MHz:
All brands seem to be a similar price give or take $100 AUD. Any suggestions?

SSD:
9100 Pro (cheapest) or 990 Pro or SN850X

Case:
TBD, depending on the parts depends on the case. I like the Fractal North & Lian Li 217 - wood panel vibe.
