Dino Ribs - 1st attempt success!

Costco dino ribs. Seasoned heavily with layered TX Brisket Rub and Meatchurch Holy Cow.

Smoked on my Grilla Kong at 275 for 8 hours with a water pan, occasionally spritzing with water as the bark crisped up.

Pulled at probe tender (200ish°F) and wrapped in butcher paper smothered in fresh beef tallow. Rested on counter top for about an 1.5 hours until internal temp read 145°F. Sliced and absolutely devoured. One of the best things I've ever cooked, albeit almost too rich!

Served with Asian style cole slaw for umamai/citrus flavor, sausage -2 types- and potato salad with baked beans.

Happy Sunday folks. Cheers!

1st Time Playing Keepers - Help

Half point PPR, 12 team league, one keeper based on last year's draft position.

We won't know draft order until an hour before draft start.

Do I keep Bijan for a 1st, KWalk for a 5th, or Olave for a 9th? I'm pretty torn.

Thanks in advance!

Wow Wings dude!

I say this as humbly as possible, just smoked and ate the most delicious wings I've ever had in my life.

Dry brined for about 6 hours precook. Seasoned heavily with salt, pepper, garlic before getting tossed on the smoker. Cooked on Grilla Kong kamado style grill, indirect heat at 300° for about 1.5 hours. Turning and spritzing with duck fat every 15ish minutes.

Crispy, tender, tasty. Wow dude.

Tri-tip, STL Ribs, Venison Sausage

Seems to be our household's holy trinity of meats. First time using Meatchurch Texas Sugar on ribs, not the best, not the worst.

Did a couple thicc bois in a 2.5 hour bath at 137°F. Dropped in a 10 minute ice bath and then seared on the infrared sear box for 3 minutes.

Perfection.
