Had nothing ready for dinner so I grabbed some cooked brown rice, leftover taco filling made from Beyond Sausage from the freezer, plus sautéd Just Chicken with canned vegan mole sauce, onion and frozen peppers fajita mix, aaand garlicky cashew yogurt. Topped with leftover guajillo sauce from taco night take out few days ago. Kids were told it’s burrito bowl night.
The only tricky part was getting the frozen chunk of Just Chicken to separate, ended up microwaving it first.
I am gradually beginning to dislike Just Chicken on account of it being way too loaded with black pepper - make it truly neutral, I like to add my own spices! - and having weird sour base flavor, but Beyond Sausage and Beyond Beef are still great.

We often have our kid’s friends over for sleepovers and we need something to feed them for breakfast that can be made quickly, in case oatmeal and toast is not their jam. One staple is waffles, with fruit spread and chocolate chips - Van’s Gluten Free Original waffles just happen to be vegan - but another option was a happy accident. We have one kid who is pretty picky and doesn’t ever eat eggs but I was eating my Just Egg folds one day, he asked to have a bite, and loved it and wanted more. And now all the kids demand “square eggs” for breakfast. They sit in the freezer and take one minute to heat up. Only drawback is they are pretty pricy and if you ask me, just bit too salty and encased in a LOT of plastic, but otherwise, square eggs it is #accidentalvegan
When we don’t have something ready to eat at home, we often go for one for the countless pupuserias around here aka Maryland / Bethesda / Rockville and surrounding areas. Today we went for El Comelito in Silver Spring strip mall, the one with Korean supermarket, Unique, Burger King which sells Impossible Burger and has indoor playground in it, and Jesus guy with megaphone on the corner. They have plain beans pupusas and they’re good with not sticking cheese into them randomly, and they have fried plantains and tamales de elote. Plus their curtido is not too crazy spicy, just has a nice little kick. It’s a big, inexpensive meal. I even had enough left for another lunch portion. If you have a pupuseria nearby, you should give a try.
The sauce is cashew and chickpea miso based with fresh turmeric and carrots. I made a vegan butter bechamel base with brown rice flour, added cashews and carrots to sauté for a while, plus grated fresh turmeric and towards the end, chickpea miso and then I blended it into smooth sauce. Came out nice and cheesy af. I added bit of Rebel cheese Smoked Cheddar on top for myself. It was actually a frozen portion that came in really handy today when I’m at home with a sick kid that was told not to have milk by the doctor in urgent care on account of throwing up this morning / upset stomach, and who just discovered that cheese can be made from nuts.
Sad news is, I used my last piece of Miyoko’s smoked cheddar cheese wheel today. Good news is, I got my shipment of assorted vegan cheese from Rebel today and will dig into that.
This was a simple plate of pasta, home made veggie tomato sauce and few Jack & Annie’s jackfruit meatballs, dressed up with that amazing smoked cheese. I’m not crying because it’s over, I’m smiling coz it happened. And yes, fuck that corparte hack team that took over Miyoko’s after kicking her out and then ran the company into the ground.
