Would a chibson be viable as a project / beater guitar

Right now my main guitar is a Greco SE500 that I use for learning and home recording. It was an 18th birthday gift from my grandma, so I don't really want to travel with it and get it banged up.

​I’m looking at a Chibson Junior DC (just the routed and nitro-painted body + neck). Are these decent platforms for upgrades?

​I have zero intention of passing it off and selling it as a legit Gibson. It’s gonna be for personal use only until its no longer usable / breaks.

How do I remove the wood veneer on the edges?

I've encountered a problem with the edges - the veneer and poly aren't coming off as easily as the top and bottom. When heating it, the glue underneath just burns instead of melting. Any ideas how to remove it?
