(ignore my thumb in one of the photos… it was before I quit biting my nails so it’s bitten to a nub 🥲)

Hi all! Would appreciate some feedback on the foods I usually eat. These are some examples of meals I make for myself. I try and eat whole foods, little to no refined sugar, I LOVE all veggies so eat tons of them. Minimal dairy except for Greek yogurt, kefir sometimes, and cottage cheese. I eat lots of fermented stuff - pickles, kimchi, sauerkraut. My favourite proteins are ground beef, ground chicken/turkey, steak (not shown, either ribeye or flank, I eat at least once a week), tofu, or beans. For carbohydrates I usually like potatoes, wild rice, couscous, barley. For breakfast Ill have cold brew, hard boiled egg, maybe some fruit, and or skyr or yogurt.

I’ve lost about 35 lbs in the past ~2 years naturally and seem to now be at maintenance (ie will not lose more weight unless I start focusing more intentionally on a deficit). I’ve have a chronic illness since forever, which I used to take very aggressive immunotherapy for. I have now put it in remission, have extremely low inflammation markers, and am on basically the lightest medication/dose and everything is working. Minimal pain, no stiffness, I can be active for long periods nowadays. All of my bloodwork (which I get every 3 ish months for my condition) is great. I’m happier, more energetic, and have a much healthier relationship with food.

I don’t really track calories but generally have a rough ish estimate most of the time. I don’t strictly avoid anything!

Estimated calories in these personal cheesecakes?

One is strawberry crunch flavour and the other is cookie butter/biscoff. I estimated about 900-1000 each but maybe underestimating. Very tasty but super sweet and rich took my boyfriend and I 4 days to finish

Contains a homemade mango coulis piped on top with shredded coconut and sesame seeds. Inside the rice krispy mix is freeze dried mango, coconut marshmellow, and more shredded coconut.

10/10 recipe as declared by my sous chef boyfriend who helped me make this
