



Base:
400g biscuits (used oreo this time)
80g coconut oil (sub for melted butter)
Mix cookies in mixer, then add oil or butter, press down until even in cake pan and set aside to chill
Cake:
1/2 can (200g) chilled coconut milk
250 g silk tofu
150 g soaked cashews
100 ml milk
6 tbsp maple syrup
2 tbsp lemon, lime or juice yuzu
1 tsp vanilla
Salt to taste
2 tsp agar agar
Mix everything together then add agar agar to cold mixture and heat up on stove for approx 2 min. Pour over base and chill for a few hours until ready to serve.
Topping:
Crumbled oreos and salted caramel (sugar on medium heat until caramel, add butter then coconut milk)
