EES data deleted while in the Schengen area with a non-European passport

I am an Uruguayan citizen, and I was recently recognized as an Italian citizen through a court judgement, but I don't yet have an Italian ID nor passport as I'm still working through the post-recognition paperwork (my birth certificate is currently being transcribed in Italy).

I live in the US, and I'm currently in the middle of a business trip to Switzerland, entering and exiting the Schengen area through a layover in Iceland, using my Uruguayan passport (visa free), and with no entry stamp (because of the EES).

At the same time, I had submitted a GDPR request to Italy to delete my personal data from the EES (they had already entered it on a previous trip) as I am an EU citizen.

Everything lined up such that Italy actually deleted my EES data yesterday, while I am within the Schengen area.

In a few days, when I go to exit through Iceland, should I expect any issues at immigration? (because my entry record no longer exists) Or do they not even check?

Anyone faced anything similar?

I won my 1948 court case and was declared an Italian citizen, and my lawyers sent my birth certificate to be transcribed in the commune of Agnone a couple weeks ago.

According to them, they haven't yet received news from the commune that the transcription has been completed, and they wait at least 60 days before reaching out to the commune (which is sensible to not cause extra work for the small commune officers).

But given it is a very small commune, I wonder if it is just possible the transcription is already done, and if anyone is aware of any way to confirm this without directly reaching out to them (and without a CIE/SPID, as I cannot get one before registering in AIRE).

I got the idea of checking by creating an account at www.prenotazionicie.interno.gov.it with my codice fiscale and checking my profile, and it does say "Cittadino" (see attached picture), but I'm not sure if it always says that, or if it is pulling it from when my codice fiscale was created (maybe Agenzia delle Entrate just has me registered as a citizen regardless of ANPR), or (hopefully) it is indeed pulling the information from ANPR because the transcription has been completed.

I'd appreciate it if anyone can share any way they know to check this, or what they see on the aforementioned website if their transcription has not been done yet.
