Made my second batch too soon - starter liquid not powerful enough?
I got some starter and scoby from a neighbor last Sunday and got my first batch going a week ago (I used 2 cups starter and 2L sweet tea). It was really cooking and by Wednesday I got impatient and bottled it(!) reserving 3 cups back to make a gallon of a new batch. My F2 tastes great if a little sweet but now I’m feeling a little nervous that I have an underpowered starter leftover in this huge gallon of kombucha going in my new F1. My pellicle continues to grow and it continues to lighten in color and change in taste - but am I opening myself up to food safety concerns by having a weak brew with a potentially too-high pH? Should I toss in some more of my neighbor’s starter (or some of my finished F2 bottled brew? It had peach and mango syrup, so mostly sugar but bits of fruit fiber and pulp).
