What's Sanderson's plan for the future of the saga?

I know there's a megathread to talk about the future show but it isn't the point of this post per se, it just made me rise a couple of general questions so please don't delete this.

I've just recently started reading The Way of Kings and I heard people say that Sanderson might "rework" some things from the first book for the show because apparently the presentation of the story from book 1 to book 5 changes. Could someone explain this to me? Also, I have another concern that might stem from the fact that I don't really know what's Sanderson plan for the future of the saga, but isn't it risky to start adapting the current 5 books when there are still as many yet to be written for the saga to be complete? Or are the future 5 books considered a different story which just happens to be set in the same world?

How to get back on track with the story

About a year ago I reached chapter 260 (sort of in the middle of Dallar Show) but I had to take a break. Unfortunately, whenever I take a break from reading something, there's a thin line between getting back to it eventually and dropping it for good. Tbh I never stopped thinking about coming back but as time passed I started to forget things and in a story with so many characters, details and events to keep track of, starting reading from where I left off woulndn't be a good idea. I don't have the time to restart all over again, otherwise I would definetely do that, so I think I should pick it up from "Hoaqin" right after Revolution Road since I remember that being kind of a turning point. Still, I want to make sure that I'm not forgetting anything so I'm asking you if there's anyone so kind to sum up all the important things that happen in the first 250 chapters or direct me to some link/video that might help me get back on track as if I never stopped reading.

Gemma's mystery is the most fascinating of the series for me

SPOILER WARNING - Don't read any further if you haven't watched S2

The main topic of the series I've been asking myself questions about, revolves around Gemma. How did Lumon get in possession of Gemma after the accident? Mark says he recognised her body after her death so did Lumon kidnapp her beforehand and created a fake copy of her body or did they steal her dead body and resuscitated her? And why her? Is there a particular reason why they picked her for that creepy project or was it random? Finally, is it just a coincidence that Mark started working in the same place where her wife was held? And if so, why did Lumon accept him as an employee given that him being closer to Gemma could have messed everything up (like it did)?

The Chikai Bardo episode is probably my favourite and one of the most emotional for sure. Also, for some reason I tend to empathise a lot with characters who have lost their significant other, so that's probably why this is the mystery I feel more invested in.

If any of these questions has already an answer that I apparently missed, feel free to help me out. Also, I would like to here your takes on this whole thing. I've only watched the series recently so let me know if there's any widely acclaimed theory or if you have your own.
