Steamed Wontons

Steamed Wontons

At a local chinese restaurant.

The sauce was mildly hot, but wonderfully spiced with Sichuan and black peppers.

The wontons had a vegetarian filling which mostly consisted of tofu, coriander stems, onions, cabbage, chillies and soy chunks.

Elaeocarpus floribundus (Indian Olive)

One of the most spectacular inflorescences I've come across! This plant sheds old flower petals at a rate that makes it seem like snowfall. And it's a complete sensory experience when you hear and see all the flies it attracts.

BDS, No Thanks in India.

Just came across the No Thanks app and I find it really effective because most of the products that retailers in India push, be it FMCGs, electronic goods, telecommunication, etc, are in one way or the other connected to the funding of war crimes.

Everyday products, from biscuits to soap; their roots go all the way to american or european corporations. Unfortunately the alternatives to these goods are owned by big indian corporations that have strong relationships with the current government whose stances on the genocide are extremely questionable.

Most indian large corporations don't feature on the No Thanks app. So, is there a way to submit some of these names there? * Moreover, are there communities with like minded individuals who are well versed with Indian brands and are willing to create repositories of boycott lists and alternatives?

*EDIT: This link appears to have a form that one can fill to suggest a a company's association with the genocide or other genocidal companies. DO NOT use it sparingly.

How to speeden up carbonation?

Since the glass bottles with the fancy cap and the lock and all (pretty common among boochers), are quite expensive where I am, I use standard plastic soda bottles (750 ml) to store my brew until it is sufficiently carbonated.

Although carbonation occurs very slowly in my case and I wonder if I'm missing a step. Well, I simply transfer the kombucha into soda bottles, tighten the lids, and store them at the same room temperature (25 -28 degrees C). And even after 5 days, the kombucha is only slightly carbonated. No dramatic fizz, or any sort of fizzy head in the glass during a pour.

I would add more sugar into the bottles, so how much do I add, into a 750 ml brew, which used a 70g : 1L. Of sugar : water ratio to make.

Are there any other ways of decreasing the time it takes to carbonate well?
