Reverse seared 45-day dry aged ribeye
Bayou butchers (Houston) 45-day dry aged ribeye: 2 hour dry brine in the fridge, 2 hours at 180°F in the Traeger (had to work late tonight, sue me), hard sear on the Blackstone at full temp with fresh tallow up to 126°, rested to 131°.
Served with brown butter, basil-garlic pomme purée; didn’t make enough of the basil garlic cream, so it ended up a bit thick, but still delicious.
Sliced and finished with a bit of Maldon salt for the wife.
Accompanied with a Bourbon Hounds of Houston barrel pick, barrel strength Jack Daniels Rye @130.6 proof.
