First time poster and I'm hoping someone can help me. I have a Apple TV box , NOW with Ultra boost and Sonos Arc Ultra, Era 100 surround and a sub

When watching Sky Sports F1 UHD during qualifying I only get PCM Stereo, however if I go to a Sky Sports Tennis I get 5.1 surround sound. I get Dolby sound via plex media.

I'm checking the above audio via the Sonos app. Tv is in passthrough for Audio and Apple TV is set up correctly I believe otherwise the Tennis channel & Plex wouldn't show 5.1.

If I go onto Now via my TV app I get HD and Dolby sound, same channel via Apple TV I get UHD but only Stereo PCM.

Anyone offer any guidance or settings to check?

What sort of setup would you clever people suggest? I currently a sonos beam gen 2 which I is ok. However I have just bought a new 65 inch TV which is great and now I want to upgrade the audio.

Below are rough dimensions the ceiling is 2.4 m high and the kitchen has 3 Eras 100 speakers in it. I can't have Eras speaker behind the sofa so they are out of the question. `

What you suggest? Beam Gun 2 and Sub mini, Arc Ultra on its own or Arc ultra and a sub Mini?
