
315 kcal chicken stir-fry - 1.16 kg / 2.56 lbs and 30 g protein
Only had around 300 kcal left on my 1500 kcal/day diet, and I wanted to EAT A LOT. So I came up with this recipe, and couldn't believe the massive amount of food it made, for only around 300kcal. I ate it all, and was a bit scared that my tummy would hurt, but it was fine. Some gas from the cabbage only this morning.
Anyways here's the recipe - and yes it was absolutely delicious
Ingredients
- 125 g lean chicken mince, about 4.5–5% fat
- 200 g white cabbage
- 100 g portobello mushrooms (or other mushroom)
- 50 g carrot
- 200 g shirataki/konjac noodles, rinsed well
- 2 tbsp light soy sauce
- ½ tsp sesame oil (or other oil)
- Garlic, ginger, salt, and whatever you like.
Method
Slice the mushrooms. Shred the cabbage and carrot.
Dry-fry the mushrooms first in a non-stick pan until they release their liquid and start to brown. Add ½ tsp toasted sesame oil, the garlic and ginger and fry for a bit, and then add the chicken mince, then cook until the mince is done. Add the shredded cabbage and carrot and stir-fry until softened. Add the rinsed shirataki/konjac noodles, and soy sauce, then cook everything together until hot and well mixed.
